Wanted: Your Recipes

Some of you have written asking where you can post recipes for me to try, or to share with others - every month I'll do a post like this one and you can reply with your favorites - veggie ones preferred!

I'll try as many as I can and report back!

    The first is a link to my friend Anna's blog for Pasta Italia. YUM! Then use leftovers to make grilled veg and italian sandwiches. The seasoning mix is excellent too! Enjoy seeing what you are trying!! :)

  2. My dear Kia... I am currently obsessed with a Wild Rice Dressing recipe that Lisa Thomas gave me. I've made it 5 or 6 times since Thanksgiving. I LOVE LOVE stuffing and this is a wheat free alternative that gives you the same taste. I have modified the recipe slightly, here is my version:
    16 ounces broth (I use Pacific brand organic vegetable broth. KSoopers has it.)
    1 cup water
    1 cup Lundberg Wild Rice blend (KS has this too)
    one half cup brown rice
    one half stick butter
    one half onion
    4 stalks celery (I like lots)
    one quarter cup chopped pecans
    fresh rosemary
    poultry seasoning (I use lots of this too)
    Salt and pepper to taste
    *the recipe calls for half a cup of dried cranberries or apricots but I don't like fruit in my food so I leave out.

    Start rice cooking in broth and water per package directions. About 50 minutes. Chop onion and celery and melt butter in skillet. Saute veggies until soft. I sometimes throw in a little grated carrot for color. At this point I add a little rosemary, poultry season and salt and let it sit until rice is finished. Combine rice, veggies and pecans in sprayed casserole dish. Season again to taste with more poultry seasoning and/or salt. Bake at 350 for 25 minutes. Try not to eat the whole thing. ;-)
