Recipe #32 - Lemon Basil Tofurkey

  • 10 ounces Tofurkey breast, (I used the Quorn pieces because I like them better)
  • 2 tablespoons fresh lemon juice
  • 2 teaspoons olive oil
  • 1/2 small onion, minced
  • 2 garlic cloves, minced
  • 3 tablespoons dry white wine
  • 2 oz. canned veggie broth
  • 2 small plum tomatoes, seeded, diced
  • 2 tablespoons chopped fresh basil
  • 1/2 teaspoon grated lemon peel
